There are lots of variations of this pineapple rice. This dish is the way I create my vegetarian pineapple rice. This dish give more flavours, colours and nutrition.
There are lots of variations of this pineapple rice. This dish is the way I create my vegetarian pineapple rice. This dish give more flavours, colours and nutrition.

Total cooking times 40 minutes( including cooking rice)
 Serves 5-6                    
4-5 cups cooked warm rice. Basmati or Thai rice
5 whole eggs, lightly beaten
250g fresh or can pineapple, chopped or dice ½ cm cube
250g- 300g kale leaves, torn  in to half length way and thinly sliced
Chopped the kale stems ½cm size
250g carrots, peeled and dice ¾ cm size
¼ – ½ bunch coriander washed and (discards the roots) roughly chopped 1 cm size
100g onions finely chopped
2-3 spring onion (optional) washed and roughly chopped I cm
2-3 clove garlic finely chopped
1 tsp table salt
¾ turmeric powder
½ tsp cinnamon powder
½ tsp curry powder
¼ – ½ tsp chilli powder
¼ cup coconut cream
 3tbs cooking oil of your choice

In a small shallow bowl, place the diced carrots and cover with kitchen pepper towel  and cook 4 minutes in microwave. Put a side.
Heat the 1 ½ tablespoons of the oil in a frying pan or wok. And swirl it around to coat the sides. Pour  the eggs and cook over medium heat, stirring constantly for 1-2 minutes. ( like scramble eggs) or until the eggs just cooked. Do not over cook the egg. Remove the cooked egg from the pan and set a side.
Wipe the wok or frying pan with a paper towel and return to the heat. Add 1 ½ tablespoons of oil. When oil is very hot add onion and garlic, fry for 1 minute. Stirring constantly, add pineapple, cinnamon, turmeric, curry powder and chilli powder. Cook 1 minute stirring well. Add ¼ cup coconut cream, kale stem, cooked carrots and salt.. Cook 2-3 minutes stirring well. Add warm rice, kale, scramble egg and coriander and if you using green (spring) onion and stir well. Cook  for 3 minutes in medium heat to high heat and time to time stir well.
Remove from the heat. Plated and garnish with coriander or spring onions if you wish.

Hints and Tips
Can use leftover rice, warm, cold rice in microwave few minutes.
 You can add your choice of vegetables;  frozen or fresh like carrots, green peas, broccoli, cauliflower, snow peas, sugar peas, cabbage, spinach, and Asian green vegetables.
More flavours and protein; can add seafood, poultry or meat.
This dish goes very well with Thai style spicy pan fry or grill seafood, chicken or meat.
Also goes with Asian style crispy, crunchy fresh salads.
