This is another one of my healthy and tasty salad dressings. Sugar and oil free, this avocado dressing can be adjusted to the texture to suit you by adding a little water to the mixture. I like to add fresh green chilli to give punch to the taste. Thick consistency of dressing can be used as a mayonnaise or as a dip.
This dressing is good for anybody, specially those who like having a healthy diet. It is very good for those who have high blood sugar, high blood pressure or cholesterol problems. There is no oil to this recipe which is very easy to make.
Preparation times 10 minutes.
Makes 400 ml.
200 g avocado flesh
1 clove garlic, peeled
1 to 2 green chillies
1/2 level tsp ground pink Himalayan salt or your choice of salt
2 1/2 tbsp – 3 tbsp lime or lemon juice
1/2 level tsp ground turmeric (optional) or 5 g fresh turmeric root
125 ml water thick consistency or 250 ml for thin consistency
1. Chillies and garlic into food processor or blender until finely chopped.
2. Add the avocado, salt,turmeric, lime juice and water to mixture and process until pureed.
*For thin consistency add 3 to 4 table spoons water and 1/2 teaspoon apple cider vinegar to taste.
3. Cover and keep refrigerated for up to 5 days.

This dressing goes well with green salads, cooked vegetables, meats and seafoods.
