Simple, easy and juicy roast chicken is something everyone can enjoy !!!   

 
Preparation + cooking time; 1H 05M plus resting time.
Serves; 4. 
 
1.5 kg organic or free range whole chicken, washed, pad dried
2  (15 ml) level tbs lime or lemon juice
1 1/2 level tsp dried Italian herbs or ( dried basil, thyme, parsley, rosemary) 
2 level tsp sweet or smoked ground paprika
1 level tsp ground pink Himalayan salt
1/2 level tsp crushed black pepper
1/2 level tsp ground turmeric
2 tsp grape seed oil or choice of cooking oil
 
Method
 
1. Mix the dried herbs, paprika, salt, pepper and turmeric in a small bowl. Add lime juice and mix until well combined.
 
2. Place the chicken onto roasting pan, breast side up. Rub the herbs mixture all over the chicken and inside the cavity. 
 
3. Drizzle the oil over the breast and place into oven lower rack. Roast preheated fan forced oven 200 °c 15 minutes and reduce the oven temperature to 170°c and roast 45 minutes. To test if the chicken is cooked insert a skewer into the thickest part of the thigh and the juice should run clear.
 
4. Remove the chicken from the oven, cover with foil and allow to stand for 10 minutes before carving.
