Avocado, smoked salmon and fresh rocket when combined gives a creamy texture and with a lime dressing, brings a tangy flavour to this salad. 

Preparation times 15 mnis.
Serves 2.
150 g smoked salmon
2 ripe avocadoes, (1cm thick) sliced
60 g fresh rocket leaves (any long leaves break into bite size) 
60 ml (¼ cup) cooking oil (I used macadamia oil)
2 (15 ml)tbs plus 1 tsp fresh lime juice 
1-3 finely chopped hot small red or green chillies (optional)
¼  level tsp ground salt (I used Himalayan salt)
1/8 tsp freshly ground black pepper
1. Combine the lime juice, salt, pepper and oil in food processor or blender, process until the combination is creamy in texture.

2. Add chopped chillies, mix well. (or use folk or egg beater, beat slowly adding cooking oil)

3. In a bowl combine rocket with 2 tablespoons of lime dressing, gently dress and arrange in the two prepared salad plates.
4. In a bowl or plate combine avocado slice with 2 tablespoon lime dressing, gently dress and arrange avocado slice on the rocket bed. Any broken avocado piece set aside for garnish.

5. Place smoked salmon over the sliced avocado and sprinkle 1 ½ table spoon of lime dressing on each plate over the smoked salmon.
6. Garnish with broken avocado pieces.
Hints & Tips: 

Lemon juice can be  substituted for lime juice.

Using lemon juice, it may need 2 table spoons plus 1 ½ teaspoons.
I mostly used lime juice for my recipes. Its taste and aroma brings freshness to the dish.
