This gluten free, fried rice recipe needs few ingredients and very easy to make. Pleasure to have for lunch or dinner.

Preparation time + cooking times 30 mins.

Serves for 5 – 6.

750 g (5 cups) cooked left over rice, warmed
150 g (1 cup) fresh or frozen green peas
150 g (1cup) fresh corn kernels or frozen corn kernels 
300 g  fresh diced carrots or frozen carrots
5 fresh free range eggs, lightly beaten
75 g spring onion (green onion, scallion) chopped into 5 cm size
20 g garlic clove, finely chopped
1+1/2  level tsp ground pink Himalayan salt or choice of salt 
1/8 tsp ground white pepper
2 tbs grape seed oil or choice of  cooking oil 
  1. Carrots; peele and dice into .5 cm X.5 cm pieces and place into bowl cover with kitchen paper towel. Cook in microwave 5 minutes.
Scramble egg;
2. Heat a frying pan over high heat, place 2 tsp of oil.
3. Add egg mixture to pan. Cook egg, stirring constantly. Transfer scrambled egg into a plate. Set aside.
Heat a same frying pan over high heat. Add oil then the garlic, spring onion and carrot, stir fry for 2 minutes. 
Add green peas and corn stir fry for 1 minutes. Add warmed rice stirring constantly.
Add  scrambled egg and stir fry for another 1 minute stirring constantly
Sprinkle with salt and pepper and stir fry for 1 minutes.
Serve with warm. 
Hints & Tips:
For this recipe great with sushi rice or jasmine rice.
