The sweet watermelon, feta cheese and peppery water cress leave and little bits dressing make a mouthwatering filling for these light snacks.

Preparations time; 15 minutes.

serve 10
20 pieces of round shaped watermelon – cut into 2 cm thick slices, then round shapes 4.5 cm along the base.
75 g feta cheese, cut into 1 cm x 1 cm 20 slices
60 g leves watercress

60 ml grape-seed oil or choice of oil
2 tbs organic apple cider vinegar or choice of vinegar
1 tsp  raw honey or choice of honey
1/4 tsp ground pink Himalaya salt choice of salt

1. In a small mixing bowl beat together all above ingredients. sate aside.

2. Place watermelon on a serving platter, top with feta cheese, then watercress.

3. Spoon the dressing over the water melon and serve.

Tips & Hints:
Cut the water melon shape, your liking; round, square, triangular, star or heart shapes.

When ready to serve then spoon the dressing.
Prepare platter 6 hours ahead and cover with cling wrap and keep in the refrigerator. This stage do not apply the dressing.
Goat cheese can substitute to feta cheese.
